Spruce tips are the new growth at the ends of a branch, which occurs in spring. They are a lighter green color than the needles. See picture below:
They are easy to pull off the tree. Once you have picked some, store them in the refrigerator until ready to use.
They can be used like a herb in salads, or combined with sugar to make syrup. This is my first time using Spruce tips, and I will attempt to make syrup using the following recipe as a guide.
